Harriet Olive makes Smokey Egglplant with Tahini, Lemon and Olive Oil

Harriet Olive makes Smokey Egglplant with Tahini, Lemon and Olive Oil for made + more @harriet.olive   This time of year is a treat, for so many reasons, but hugely because it’s the season for the produce that fills the pages of some of my favourite cookbooks (hello Mediterranean). Tomatoes, eggplants and peaches are pure perfection. My last recipe of this wild, wild year pays homage to a chef who is a never-ending source of inspiration for me, and one I’ve learned a lot from this year through cooking her recipes, Gabrielle Hamilton of Prune restaurant in NYC. Harriet Olive Makes Berry Bowls for made + more

Harriet Olive makes Berry Bowls made by Harriet Olive  @harriet.olive It’s that glorious time of year; days are long, nights are warm, and produce is beautiful (hello stone fruit and berries and cherries). My eating habits change dramatically with the seasons, particularly breakfast. All of a sudden, you want something light and cool as we head into the summer months so it’s fruit galore for me. I often buy double of the fruit, whether it be peaches or berries, and freeze half to have at the ready for bowls like this one. This berry bowl is one of my faves. For me, this changes everything in the kitchen. I want light, bright, fresh, cold, crunchy, simple. Dishes that make me feel (especially at the moment) like I’m on the cliffs in Sardinia. That’s exactly what this dish is inspired by. Roasted grapes are a brilliant discovery. A little go in the oven releases their sweetness that balances wildly well with salty, whether that be from sea salt flakes, ricotta or some fab anchovies.   For my latest recipe, I’ve done these roasted grapes...

Harriet Olive makes Spiced Cauliflower, Roast Vegetable and Kale Salad - for made + more

Harriet Olive makes Spiced Cauliflower, Roast Vegetable and Kale Salad made by Harriet Olive  @harriet.olive     WHAT I'M MAKING Let the cauliflower caramelise and become almost meaty before you pull it out of the oven and drizzle it with the zesty tahini dressing. This is one of my go-to autumn or winter salad when I’m feeling like I need something on the lighter side but still comforting and nourishing. You can throw in whatever spices you have and love but would definitely recommend keeping the turmeric and cumin. A curry powder is also great here.         INGREDIENTS  Spiced cauliflower salad Half cauliflower head ¼ cup olive oil 1 tbsp turmeric 1 tbsp cumin 1 tsp ground...
